Chocolate Inspiration: Galerie au Chocolat Fire/Feu

Galerie au Chocolat Fire is a taste sensation that was mentioned to me in April and introduced to me at Whole Foods in October. I have consumed a couple bars myself and have introduced many friends to the product as well.

Fire like the name suggests is a dark chocolate that is spicy. It is a rich, fine dark chocolate that has a little kick of heat that builds up slowly. Galerie au Chocolat Fire is my favourite chocolate with chili I have tried so far.

The intense flavour itself provides portion control is what some friends have observed. They feel one square of this chocolate is enough. This is so true-enjoying food with highly satisfying flavour and texture is a built in form of portion control.

Recipe: Tanzanian Hot Sauce

I learned of this recipe while sharing lunch with a generous young lady from Tanzania a couple weeks ago. This is a homemade hot sauce that is also known as pilli pilli. It can be served with grilled meats or anything else you enjoy with hot sauce.  Here is my version of the free form recipe with scotch bonnet pepper and tomato being the key base ingredients, then you add other ingredients to your taste. It is important to use scotch bonnet or habanero pepper for their flavour. Lime and sugar are nice additions to round out the heat.

2 tomatoes, diced

2 scotch bonnet peppers, seeded (leave the seeds in if you like it really hot)

1 shallot, minced

juice of 1 lime

1-2 teaspoons sugar

1/4 cup chopped cilantro

salt to taste

In a food processor, puree all ingredients. Adjust seasonings to your taste or add any other variation you enjoy, such as, garlic, onion, ginger, lemon, etc.

I procured sour cherry pie from both Madeleine’s and Wanda’s Pie in the Sky and ran a little taste test…

My favourite pie is still Wanda’s (their apricot pie is my absolute favourite). I prefer the Wanda’s Pie in the Sky crust and the reason seems to be the taste of butter. Wanda’s pie crust is made with 2/3 butter and 1/3 non hydrogenated trans fat free shortening. Madeleine’s pie crust is 100% non hydrogenated trans fat free shortening (more vegetarian friendly). The Madeleine’s sour cherry filling does have a slight edge over the Wanda’s sour cherry filling. So, both sour cherry pies are outstanding, as they are both made by amazing pie makers.

Pie is not an everyday food. It is a special treat to be shared and enjoyed with love.

Happiness Ideas

Most people will say what they want in life is to be happy. However, we all know that it is not quite possible to be feel happy all the time, and ‘happy’ would have an entirely different meaning if it were a constant state. There is an enormous range of emotion we all feel throughout our journey in life, and all is impermanent. So what does it really mean to be happy? An important question to ask ourselves and the answer will be unique for each of us. For myself, I will share that much of my philosophical outlook on being happy is expressed in my previous post on practicing truthfulness.

To further explore the idea of creating happiness in our lives, here is an article I learned of through a friend. One claim here is that these are happiness ideas with no spiritual philosophy, just ‘evidence’. Food for thought…

Your Words Are Your Wand…

What we think, we become-Buddha

The quote above crossed my path last weekend. It is so true, as the mind is everything, and the thoughts you choose to have truly make a difference in the reality you create, both positive and negative. Thereafter, I came across:

Through perfect truthfulness, yogins acquire the power of having their words always come true. (The Yoga Tradition, Georg Feuerstein)

Having your words always come true sounds incredibly amazing, doesn’t it? However, the practice of truthfulness is challenging. It requires that we are committed to the truth and speak the truth, even though avoidance may feel like an easier option. The most challenging part for many of us, is to be truthful to our own heart, inner calling and our true higher purpose-to live our own truth. Even when we find clarity in our heart’s desire, courage to is needed to live our truth. Living our truth may require us to go far outside of our comfort zone, take risks, and make choices that help us to transcend our current reality, constructs and expectations. We know we are living our truth when we feel love in our heart and peace within our whole being. Peace, contentment and happiness are likely to come from this practice, if you are mindful of your words, especially when they come true…Your words are your wand when you are being perfectly truthful.

Recipe: Guacamole

Avocados are a healthy super food with their high monounsaturated (healthy) fat content, fiber content, vitamin A, vitamin E, vitamin B, vitamin C, copper, and lutein for the prevention of macular degeneration. My favourite way to have avocado is in guacamole. Here is my take on guacamole, everyone has their own, so make it your own with your own additions. I use shallot as a cross between onion and garlic. I feel cilantro and jalapeno are required for zip and spice.

2 ripe avocados

Lime juice to taste (1/2 lime)

1 plum tomato finely chopped

1 shallot finely chopped

1/2 jalapeno pepper finely chopped

2 tablespoons chopped cilantro

Salt and pepper to taste

In a medium bowl, scoop out avocado, mash with a spoon and mix in lime juice. Add tomato, shallot, jalapeno and cilantro, mix well. Season with salt and pepper to taste. Place the avocado seed in the guacamole if you are not serving it immediately to help prevent browning. Enjoy with tortilla chips, crackers or with tacos.

 

The Holy Trinity of Junk Food: Chips, Pop and Chocolate Bars…

I refer to chips, pop and chocolate bars as the holy trinity of junk food. I made up this term to help people become more aware that these three ‘foods’ feed upon each other and can cause overeating. Chips can be addictive on their own with their salty crunch in small pieces you eat by the handful. Take a sip of sweet tasting pop with a touch of acidity in between and your taste buds reset for more salt, which is satisfied by more chips. Then, you want a little sweetness, so you reach for a chocolate bar. A person could easily cycle through the chips, pop and chocolate bar several times and barely register feeling full, as you are moving from one taste sensation to another. These are foods we like to eat for the taste and texture sensation they provide. The salty crunch of the chips, the effervescence of the pop and the creamy, sweetness of the chocolate bar.

Perhaps you do or do not eat the holy trinity of junk food together. I will confess here that I love potato chips, a bubbly drink and chocolate, but I don’t tend to eat all three of  them in the holy trinity format at once. I prefer to enjoy each of these foods separately. Sometimes, I have flavoured club soda with chips. My recommendation is to have high quality, real food that satisfies all the taste and texture sensations mentioned above.

Here is my recommendation list for the holy trinity of junk food, real food options:

For Chips: Try ‘fresh’ chips  (which have a short shelf life) such as the handcut potato chips at Leah’s 621 St Clair Avenue West www.leahs.ca or the brown bag potato chips at the Whole Foods www.wholefoodsmarket.com sandwich counter. Any freshly made chip you can get your hands on is a good choice.

For Pop: Try sparkling water with added flavour. A squeeze of lemon, lime or orange works well in bubbly water. For an extra burst of flavour try Minisyrup http://www.zavida.com/minisyrup, an unsweetened, natural flavouring product on its own or in addition to the squeeze of lemon, lime or orange for a healthy calorie free soda or pop. Natural minisyrup flavours are: grape, lemon, mango, pear, orange, raspberry, strawberry kiwi. Many testers have really enjoyed a mango lime soda just for the taste. ‘It’s like pop!’ has been the response and they have been pleasantly surprised that it was calorie free with no (artificial) sweetener.

Mixing a little real fruit juice with bubbly water also makes a great pop alternative. The San Pellegrino sodas are also a good choice, as they contain fruit juice and sugar. I discovered Bottlegreen soda while in the UK http://www.bottlegreendrinks.com/products/presses/sparkling-presse/

They are a delicious lower sugar soda. Their cordials mixed with bubbly water would also be a great pop alternative.

For chocolate: Try dark chocolate, which has less sugar. Stick with milk chocolate if that is what you prefer. I love Gallerie au Chocolat www.galerieauchocolat.ca, which is available at Whole Foods. Green and Blacks, Cocoa Camino are also great organic chocolate bars with interesting flavours. Lindt has a good variety of dark chocolate and is widely available.

You may find that you will be naturally inclined to eat less chips and chocolate if you have a less processed real food version. The lower sugar pop alternatives are also helpful in guiding your appetite. Please thoroughly enjoy your holy trinity of junk food in moderation, free of guilt.

 

Longevity: Where People Forget to Die…

The author also wrote the Blue Zones, which is a great book that details various pockets in the world where people have great longevity by living a more traditional lifestyle.

For most urban, city dwelling people, living in the country or an island on a self sufficient garden/farm community seems foreign. However, there are many lifestyle ideas that we could apply to our daily life that could help us be happier and healthier. Some lifestyle concepts we could apply to our daily lives for more enjoyment and health include:

-physical activity, which means taking a walk, walking to places you need to go, doing a workout you enjoy

-enjoy the outdoors daily, if possible

-spend time with family and friends daily, if possible

-enjoy high quality, natural whole foods everyday

-take time to drink tea, coffee with family and friends

-drink in moderation

-sleep and nap well

-manage your activities, not time, as time is actually beyond our control

Generally, it seems to me that taking time to enjoy the present moment of your life is a way to be well. I most certainly love to make life good.

 

Healthy Yorkville Lunch: Mela Cafe

I am 8 years late in my discovery of Mela Cafe, Italian Vegetarian Magic at 7 Yorkville Avenue 416 916 0619. Perhaps its location where Wanda’s Pie in the Sky once was kept me from coming too close, as I missed Wanda’s very much. I came across Mela Cafe last week after buying DLish cupcakes and looked around the corner for some lunch. Yes, I got dessert before choosing a spot for lunch.

The chalkboard menu and glass display cases at Mela Cafe were very enticing. I tasted a certain magic in the food with the mixed veggie salad and sweet potato mash with rapini topped with homemade tomato sauce I had. I enjoyed my lunch so much that I went back the next day for beet risotto with greens, which was delicious. As was their signature eggplant sandwich, which I enjoyed another time.

Mela Cafe is a great little spot to have some lunch or get takeout for dinner. Their food is prepared with great care to a point where the chefs Roberto and Kim grow their own vegetables. They are real innovators here. The quality shows through in the delightful taste of the food. I highly recommend Mela Cafe for a healthy, delicious meal that inspires us to eat more veggies by showing us how tasty veggies can be. What an amazing accomplishment for Mela Cafe!
